Bud-heavy teas such as Silver Needle generally contain more caffeine than leafier grades like Shou Mei, although the caffeine content is typically lower than a standard cup of coffee.
For most Fuding White Teas, use fresh water heated to 90–100°C (194–212°F). Brew 3–5 grams of tea with 150–200 ml of water. Start with a 30–60 second infusion and gradually increase the brewing time for later infusions. Premium white tea can usually be steeped several times while continuing to develop new layers of flavor.
Not all Fuding White Tea is organic. Organic certification depends on the farming practices of each individual tea garden and producer, rather than the region itself. Shou Mei is made from more mature leaves and buds harvested later in the season, resulting in a richer, fruitier, and more robust character that is especially suitable for long-term aging.
